Reserve Shiraz

The Blue Pyrenees Reserve Shiraz wines are based around the oldest (40 years) Shiraz vines on the Estate vineyard. Taking inspiration from the Northern Rhone wines of France a small portion of the white grape Viognier is co-fermented with the Shiraz to dryness before a 4 week extended maceration takes place in our 15 tonne static fermenters. After pressing the wine is racked to new and 2 year old French and American oak barriques for 24 months maturation before final barrel selection, blending of those barrels, and a light egg white fining before bottling.
 

Tasting Notes

Colour: Bright ruby red.
Aroma: Fragrant blueberry and apricot fruits plus pepper and toasty oak.
Flavour: Exotic white and dark fruits intermingled with forest undergrowth notes precede a long lasting, fine tannin peppery finish. The medium weight structure and vibrancy of this wine ensure it has many possible food matches.
Technical: Alcohol: 14.8%        TA: 6.36g/L      pH: 3.50
