Aged Red Wines
The texture of high quality red wine becomes rounder and smoother with age, many of the firmer characters being bevelled by the softening of the tannins (polymerisation) resulting in increased richness and complexity. Red wines lose their youthful fruitiness and develop secondary characters such as chocolate, mocha, leather, sandalwood camphor, mosswood, seaweed and mature cheese.

The 1993 vintage is typified by a full, cherry garnet colour.
The nose shows wonderful fruit aromas with red berry, mint and light plum, and delicate French oak influence.
The palate is full of ripe fruit flavours with soft spiciness, subtle tannins and a satisfying length.

Original tasting note: The latest release of the highly acclaimed Blue Pyrenees Estate form the cool climate Pyrenees region in Western Victoria is a prime example of this outstanding wine.
In our traditional search for excellence only a small percentage of the harvest is used, isolating the finest quality estate grown fruit. A blend of wines from the best barrels has produced a balanced, rich wine.
In the words of our Chief Winemaker, Vincent Gere 'the tradition of Blue Pyrenees Estate is to release a structured wine with generosity and elegance'.
Picking times: 20/4/93-1/5/93. Fine late autumn with good ripening conditions.
Time in oak: Some barrel fermentation. 20 months in Nevers Oak casks. 30% aged in new oak, 40% aged in one year old oak, 15 per cent aged in two year old oak, 15 per cent aged in three year old oak.
Blend: 78% Cabernet Sauvignon, 8% Shiraz, 9& Merlot, 5% Cabernet Franc.
Production: 4,030 cases.
