Aged Red Wines
The texture of high quality red wine becomes rounder and smoother with age, many of the firmer characters being bevelled by the softening of the tannins (polymerisation) resulting in increased richness and complexity. Red wines lose their youthful fruitiness and develop secondary characters such as chocolate, mocha, leather, sandalwood camphor, mosswood, seaweed and mature cheese.
WINE CLUB: $50.00 – exclusive to wine club members.
Two bottle limit per customer.
Bright ruby red.
Fragrant blueberry and apricot fruits plus pepper and toasty oak.
Exotic white and dark fruits intermingled with forest undergrowth notes precede a long lasting, fine tannin peppery finish. The medium weight structure and vibrancy of this wine ensure it has many possible food matches.
- Growing Conditions
Original tasting note: The Blue Pyrenees Reserve Shiraz wines are based around the oldest (40 years) Shiraz vines on the Estate vineyard. Taking inspiration from the Northern Rhone wines of France a small portion of the white grape Viognier is co-fermented with the Shiraz to dryness before a 4 week extended maceration takes place in our 15 tonne static fermenters. After pressing the wine is racked to new and 2 year old French and American oak barriques for 24 months maturation before final barrel selection, blending of those barrels, and a light egg white fining before bottling.
