Aged Red Wines
The texture of high quality red wine becomes rounder and smoother with age, many of the firmer characters being bevelled by the softening of the tannins (polymerisation) resulting in increased richness and complexity. Red wines lose their youthful fruitiness and develop secondary characters such as chocolate, mocha, leather, sandalwood camphor, mosswood, seaweed and mature cheese.

Dark fruits and licorice intermingled with forest undergrowth notes precede a long lasting, fine tannin Rosemary finish. The medium weight structure and vibrancy of this wine ensure it has many possible food matches.
- Growing Conditions
Original tasting note: The Blue Pyrenees Reserve Shiraz 2009 is made from select parcels of mature vine Shiraz grapes (40 years old) from our estate vineyard , that exhibit strong varietal characters. These parcels of grapes are fermented to dryness in open fermenters with a small amount of Viognier before pressing to extract all the colour, flavour and natural tannin from the skins. After pressing the wine is racked to barrels, new to eight year old French and American oak barriques for MLF & 24 months maturation before final barrel selection, blending of those barrels, and a light egg white fining before bottling.
