A rich mouthful of red berry flavour complemented by fresh basil notes, damp earth, tobacco and cedar wood. Medium-bodied only but with a unique fragrance and a lingering black olive flavour that invites immediate drinking. Surely a great pasta match.
- Winemaking Notes
Cabernet Franc is one of the parent grapes of the better known grapes Cabernet Sauvignon, Merlot & Carmenere. Cabernet Franc red wines are better known in the Loire Valley or the Pomerol area in the Bordeaux region of France, where it is most often blended with other red varieties. The Blue Pyrenees winemakers saw the beauty of the riper styke, from this variety and the warm 2018 vintage, and decided to keep some of it separate from the regular blending program , where it is known to add a lifted floral perfume. The wine was fermented for 1 week on skins in an open fermenter and pressed close to dryness before settling and racking to 2 and 4 year old French oak barriques for secondary fermentation and maturation for 24 months before fining and bottling in August 2020.
